These protein filled, chocolate chip oatmeal cookies are INCREDIBLE!  I recently discovered Kodiak Cakes pancake mix at Costco and am have been so impressed with it.  Per serving, the mix has 14 grams of protein, 3 grams of sugar, and 5 grams of fiber.  It's 100% whole grain and can be used in SO. MANY. WAYS.  So far I've only made the pancakes and this adapted cookie recipe, but I can't wait to try some of the savory recipes (pizza crusts, cheddar bacon zucchini bread, and mini quiches to name a few!).  Use the link below to order on Amazon!


I only added chocolate chips to mine, but they would also be great with nuts, raisins (or other dried fruit), m&ms, reese's, peanut butter...you name it, it would probably taste good in these cookies.  

PREP TIME: 10 minutes
COOK TIME: 7-10 minutes (on 350 degrees)

INGREDIENTS: 
1 1/2 cups Kodiak Cakes Flapjack Mix
1 cup quick oats, blended (I blended mine, but if you don't want to they would still be great!)
2 cups of chocolate chips (or whatever you decide to add)
3/4 cup of melted butter
1 1/2 cup of brown sugar (they were very sweet--I might try to add less sugar next time!)
1 tablespoon of vanilla
1 egg

Instructions: preheat oven to 350.  Mix (by hand or in a mixer) melted butter, brown sugar, egg, and vanilla.  Add Kodiak Cakes mix and blended oats and mix until incorporated (DO NOT OVERMIX!).  Add chocolate chips or other additions and fold in gently.  Bake for 7-10 minutes and ENJOY!

TIP:  I always add aluminum foil to my cookie sheet before baking.  Once the first batch is done just remove the cookie sheet from the oven and (using oven mits!) pick up the foil and place it on the counter or on a cooling rack.  This allows you to cool your cookies and bake more cookies faster!
